A couple of weeks ago, a co-worker gave me some tomatillos from her garden because she was going away on vacation and didn't want them to go bad. Today I took the plunge and made my own salsa verde with a simple recipe I found on the Internet.

The ingredients were few (tomatillos, jalapenos, a little sugar, some lime juice, onion, salt to taste. The receipt called for cilantro but I omitted it because I'm one of those genetically programmed to think it tastes like soap),the techniques easy (roast the tomatillos, chop everything else, toss into a blender and pulse to desired consistency). The results?

YUM.

Next time I may throw in another jalapeno for more heat, or more lime juice, but this batch is mighty nice. If I can find a tomato salsa recipe I like as much, I may never buy commercial again.

For years I've been making what I call Salsa Fresca, but I've seen it called Pico de Gallo also. It's tasty, fresh, and wonderful when the tomatoes are just ripe...

It's simple:

Fresh tomatoes, seeded and then chopped into small cubes
Onion, minced (I like red onion for this)
Garlic, minced (I use, um, a lot of this)
Lemon or lime juice, fresh is best
the zest from the above lemon or lime
salt
Cilantro, but now I use parsley as Geordie hates cilantro, chopped up small
Olive oil, just a teaspoon or so
a dash of sugar, if you need it

Mix into a bowl and try to avoid eating it all today. If it had more veg in, it could be gaspacho, now that I look at it.

And now I want to make it.

It is very tasty.

It's also very customizable; I've put in chopped bell pepper, chopped other veggies (cucumber is tasty), but really the only required bits are tomato, an acid (apple cider vinegar is good, as is balsamic), some oil, and the alliums (allia?).

I think we'll get tomatoes at the farm stand tomorrow!

It does taste like soap. It's just some people can't tell. :)

I make my own salsa due to garlic/onion allergy.
