Just got word from UNL that they have everything they need...

Except the recommendation from my old clinic director.

I've already left her a voicemail - should I leave another? Or ask someone else?

Leave her another voicemail. . . if she doesn't answer by mid day ask someone else. This is important. Don't let her leave you dangling.

I think a polite follow-up call is good, just in case she honestly left it on her desk or something - a second chance is nice.

But I'd call someone else too, just in case - no harm in having an extra recommendation if you get both, right? :) And if you don't get the first one, you're not high and dry and behind schedule because you'll have the second.
